ANZAC Biscuits

A traditional Australian and New Zealand sweet biscuit made with rolled oats, coconut, and golden syrup.

Ingredients

  • 1 cup rolled oats
  • ¾ cup desiccated coconut
  • 1 cup plain flour
  • 1½ tsp bicarb soda
  • 2 tbsp boiling water
  • 1 cup sugar
  • 120g salted butter
  • 1 tbsp golden syrup

Method

  1. In a bowl, combine rolled oats, sifted flour, sugar and coconut.
  2. In a small pot, combine butter and golden syrup, stiring over a gentle heat until melted.
  3. Mix bicarb soda with boiling water, then add to the melted butter mixture (it will foam up). Stir it into the dry ingredients.
  4. Spoon big spoonfulls of mixture onto greased over tray, allowing room for spreading.
  5. Bake in at 150 degrees for 20 minutes, then allow to cool.
