ANZAC Biscuits

A traditional Australian and New Zealand sweet biscuit made with rolled oats, coconut, and golden syrup.

ANZAC Biscuits

Ingredients

  • 1 cup rolled oats
  • ¾ cup desiccated coconut
  • 1 cup plain flour
  • 1½ tsp bicarb soda
  • 2 tbsp boiling water
  • 1 cup sugar
  • 120g salted butter
  • 1 tbsp golden syrup

Method

  • In a bowl, combine rolled oats, sifted flour, sugar and coconut.
  • In a small pot, combine butter and golden syrup, stiring over a gentle heat until melted.
  • Mix bicarb soda with boiling water, then add to the melted butter mixture (it will foam up). Stir it into the dry ingredients.
  • Spoon big spoonfulls of mixture onto greased over tray, allowing room for spreading.
  • Bake in at 150 degrees for 20 minutes, then allow to cool.
