ANZAC Biscuits
A traditional Australian and New Zealand sweet biscuit made with rolled oats, coconut, and golden syrup.
Ingredients
- 1 cup rolled oats
- ¾ cup desiccated coconut
- 1 cup plain flour
- 1½ tsp bicarb soda
- 2 tbsp boiling water
- 1 cup sugar
- 120g salted butter
- 1 tbsp golden syrup
Method
- In a bowl, combine rolled oats, sifted flour, sugar and coconut.
- In a small pot, combine butter and golden syrup, stiring over a gentle heat until melted.
- Mix bicarb soda with boiling water, then add to the melted butter mixture (it will foam up). Stir it into the dry ingredients.
- Spoon big spoonfulls of mixture onto greased over tray, allowing room for spreading.
- Bake in at 150 degrees for 20 minutes, then allow to cool.
