Sweet Potato Mash With Lime Salsa
This Ottolenghi recipe is awesome with sausages, pan-fried tofu, or paneer steaks.
Ingredients
- some sweet potatoes, skin left on and cut in half lengthways
- olive oil
- handful of basil leaves, finely chopped
- handful of coriander leaves, finely chopped
- small clove of garlic
- 1 big juicy lime (or use two) juiced and zested
- salt and pepper
Method
- Preheat the oven to 200 degrees.
- Season the sweet potatoes with some oil and salt, then place on a lined baking tray flesh-side down.
- Roast for 30-40 mins until very soft.
- Meanwhile, in a small bowl mix a few tablespoons of oil with the rest of the ingredients, season with salt and stir to combine.
- Once the sweet potatoes have cooled a little, peel off the skins and mash the flesh. Season with salt and pepper.
- Spread on a plate and spooning the salsa on top. Enjoy!
