Sweet Potato Mash With Lime Salsa

This Ottolenghi recipe is awesome with sausages, pan-fried tofu, or paneer steaks.

Sweet Potato Mash With Lime Salsa

Ingredients

  • some sweet potatoes, skin left on and cut in half lengthways
  • olive oil
  • handful of basil leaves, finely chopped
  • handful of coriander leaves, finely chopped
  • small clove of garlic
  • 1 big juicy lime (or use two) juiced and zested
  • salt and pepper

Method

  • Preheat the oven to 200 degrees.
  • Season the sweet potatoes with some oil and salt, then place on a lined baking tray flesh-side down.
  • Roast for 30-40 mins until very soft.
  • Meanwhile, in a small bowl mix a few tablespoons of oil with the rest of the ingredients, season with salt and stir to combine.
  • Once the sweet potatoes have cooled a little, peel off the skins and mash the flesh. Season with salt and pepper.
  • Spread on a plate and spooning the salsa on top. Enjoy!
