Veggie Lasagna
Requires a bit of prep but honestly, who doesn't love a comforting, cheesy lasagna!
Ingredients
- 12 lasagna sheets
- 400g ricotta cheese
- 1 egg
- ¼ cup fresh parsley, chopped
- ½ tsp salt
- ¼ tsp black pepper
- 3 cups pasta sauce
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
Method
- Preheat the oven to 200°C. Cook the lasagna sheets according to package instructions, then drain and set aside.
- In a medium bowl, mix together ricotta cheese, egg, parsley, salt, and pepper.
- Spread 1 cup of pasta sauce in the bottom of a large baking dish.
- Layer 4 lasagna sheets over the sauce. Spread 1/2 of the ricotta mixture over the pasta. Sprinkle 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese and 1 cup of sliced mushrooms over the ricotta mixture.
- Repeat layers, starting with lasagna sheets, then ricotta mixture, mozzarella cheese, Parmesan cheese and sliced mushrooms.
- Finish with a final layer of lasagna sheets and top with remaining marinara sauce.
