Zucchini with Olive Oil and Tomatoes

Adding just a little rice, this simple Turkish side-dish has a flavour greater than the sum of it parts.

Ingredients

  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, sliced
  • 2 tomatoes, chopped
  • 3 zucchinis, thick 2-3cm slices
  • 1 heaped tbsp rice
  • 1 tsp salt
  • chopped parsley

Method

  1. Heat the oil in a heavy-based pot, add the onion and saute until fragrant. Add the garlic and saute a little longer.
  2. Add the tomatoes to the pot and simmer until the liquid has slightly reduced, then add the zucchini, rice, and salt to the pot.
  3. Stir to combine, then place a lid on the pot, and simmer over the lowest heat for 10 minutes.
  4. Next add a little water to the pot (around 1 or 2 tablespoons) along with the chopped parsley.
  5. Place the lid back on the pot and continue to cook for another 15 minutes, or until zucchini is cooked through. Enjoy!
