Turkish Red Lentil Soup

Mercimek Corbasi is a simple and wholesome blended soup spiced with paprika.

Turkish Red Lentil Soup

Ingredients

  • 1 onion, roughly chopped
  • 3 cloves garlic, roughly chopped
  • 1 carrot, roughly chopped
  • 1 potato, cubed
  • 2 cups red lentils, washed
  • 1 tsp smoked paprika
  • ½ tsp tumeric
  • ½ tsp ground black pepper
  • 2 tsp salt
  • butter (optional)

Method

  • Soak the washed lentils in water for 10-15 minutes.
  • Meanwhile, add some oil to a heavy-based pot and saute the onion. Once fragrant, add the garlic, carrot, and potatoes and saute for 5 minutes.
  • Add the drained lentils to the pot, along with the spices, and cover with a generous amount of water.
  • Bring the pot to a boil, then reduce the heat and simmer for 30 minutes. Using a stick blender, blend until smooth.
  • For garnish, melt some butter in a small pan and add another teaspoon of paprika. Stir to combine. Spoon over the soup when serving.
