Turkish Red Lentil Soup
Mercimek Corbasi is a simple and wholesome blended soup spiced with paprika.
Ingredients
- 1 onion, roughly chopped
- 3 cloves garlic, roughly chopped
- 1 carrot, roughly chopped
- 1 potato, cubed
- 2 cups red lentils, washed
- 1 tsp smoked paprika
- ½ tsp tumeric
- ½ tsp ground black pepper
- 2 tsp salt
- butter (optional)
Method
- Soak the washed lentils in water for 10-15 minutes.
- Meanwhile, add some oil to a heavy-based pot and saute the onion. Once fragrant, add the garlic, carrot, and potatoes and saute for 5 minutes.
- Add the drained lentils to the pot, along with the spices, and cover with a generous amount of water.
- Bring the pot to a boil, then reduce the heat and simmer for 30 minutes. Using a stick blender, blend until smooth.
- For garnish, melt some butter in a small pan and add another teaspoon of paprika. Stir to combine. Spoon over the soup when serving.
