Zucchini with Olive Oil and Tomatoes
Adding just a little rice, this simple Turkish side-dish has a flavour greater than the sum of it parts.
Ingredients
- 3 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, sliced
- 2 tomatoes, chopped
- 3 zucchinis, thick 2-3cm slices
- 1 heaped tbsp rice
- 1 tsp salt
- chopped parsley
Method
- Heat the oil in a heavy-based pot, add the onion and saute until fragrant. Add the garlic and saute a little longer.
- Add the tomatoes to the pot and simmer until the liquid has slightly reduced, then add the zucchini, rice, and salt to the pot.
- Stir to combine, then place a lid on the pot, and simmer over the lowest heat for 10 minutes.
- Next add a little water to the pot (around 1 or 2 tablespoons) along with the chopped parsley.
- Place the lid back on the pot and continue to cook for another 15 minutes, or until zucchini is cooked through. Enjoy!
