Zucchini with Olive Oil and Tomatoes

Adding just a little rice, this simple Turkish side-dish has a flavour greater than the sum of it parts.

Zucchini with Olive Oil and Tomatoes

Ingredients

  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, sliced
  • 2 tomatoes, chopped
  • 3 zucchinis, thick 2-3cm slices
  • 1 heaped tbsp rice
  • 1 tsp salt
  • chopped parsley

Method

  • Heat the oil in a heavy-based pot, add the onion and saute until fragrant. Add the garlic and saute a little longer.
  • Add the tomatoes to the pot and simmer until the liquid has slightly reduced, then add the zucchini, rice, and salt to the pot.
  • Stir to combine, then place a lid on the pot, and simmer over the lowest heat for 10 minutes.
  • Next add a little water to the pot (around 1 or 2 tablespoons) along with the chopped parsley.
  • Place the lid back on the pot and continue to cook for another 15 minutes, or until zucchini is cooked through. Enjoy!
