Stir-Fried Sweet Potato Noodles

A popular Korean dish of glassy sweet potato noodles stir-fried with vegetables and a sweet and savory sauce.

Ingredients

  • 8 oz sweet potato noodles (dangmyeon)
  • 1 tbsp sesame oil
  • ½ onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 carrot, julienned
  • 1 bell pepper, julienned
  • 1 cup sliced mushrooms
  • 2 green onions, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame seeds

Method

  1. Cook the sweet potato noodles and rinse with cold water.
  2. Sauté onions and garlic in sesame oil until softened.
  3. Add carrot, bell pepper, and mushrooms and cook for 2-3 minutes.
  4. Add green onions and cook for 1-2 minutes.
  5. Mix soy sauce and sugar in a small bowl.
  6. Add noodles to the pan and pour soy sauce mixture over them. Stir well to coat evenly. Cook for 1-2 minutes or until heated through.
  7. Sprinkle with sesame seeds. Serve hot as a main or side dish.
