Stir-Fried Sweet Potato Noodles

A popular Korean dish of glassy sweet potato noodles stir-fried with vegetables and a sweet and savory sauce.

Stir-Fried Sweet Potato Noodles

Ingredients

  • 8 oz sweet potato noodles (dangmyeon)
  • 1 tbsp sesame oil
  • ½ onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 carrot, julienned
  • 1 bell pepper, julienned
  • 1 cup sliced mushrooms
  • 2 green onions, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame seeds

Method

  • Cook the sweet potato noodles and rinse with cold water.
  • Sauté onions and garlic in sesame oil until softened.
  • Add carrot, bell pepper, and mushrooms and cook for 2-3 minutes.
  • Add green onions and cook for 1-2 minutes.
  • Mix soy sauce and sugar in a small bowl.
  • Add noodles to the pan and pour soy sauce mixture over them. Stir well to coat evenly. Cook for 1-2 minutes or until heated through.
  • Sprinkle with sesame seeds. Serve hot as a main or side dish.
